Pecan Rice Casserole

Recipe type: Side Dish
- 1 stick butter
- 1 cup rice (I used a combination of rices like wild, black and brown)
- 1 cup pecans
- 1 can Beef broth
- 1 can French Onion Soup
- Brown rice in butter. When rice is brown add pecans and brown watching closely so they will not burn.
- Place in a 1½ quart casserole dish.
- Add both cans of soup and mix. The pecans will float to the top.
- Bake covered at 350 degrees for 30 minutes.
- Uncover and bake an additional 15 minutes or until fluffy. ( I find it takes about 5 minutes longer)
- Enjoy
This a a great potluck dish and it freezer well. Make sure to cook in a freezer safe dish if planning to freeze. Wrap in foil and mark the date.
